I love this recipe because it is SO easy! I am ALL about easy folks. By the time dinner rolls around I'm just so tired and I want to make anything that is easy to throw together. You just dump all the ingredients into a bowl and let it set for at least an hour to let all the flavors to mingle. Then when ever you are ready you just boil up some angel hair pasta! Voila! You're done! Can't get any easier that this guys! You serve the sauce cool, with warm pasta. It is really nice on those hot summer days when all you want is something cool and healthy.
If I'm feeling like dessert I will serve it with some sorbet and fresh fruit. Makes for a super healthy and filling summer meal! Enjoy!

Goodness me! These two recipes have me wanting to buy a copy of this recipe book! How simple are these two!? I'll be printing these two out and trying them. I'll let you know how it works out. We've been grilling a lot lately. I can probably do the asparagus on the grill wrapped in aluminum foil. :)

ReplyDelete@SuburbiaMom & @Colleen: I'll ask Katie if she has any left! She even took all the pictures of her dishes herself. I'm SERIOUSLY impressed with how professional her book is. It was a perfect wedding gift. Giving me some healthy recipes to start our life off together.
ReplyDeleteThe Summer Sauce for Pasta is actually SOOOOO easy but it makes you look like a rock star chef! It is really healthy, tastes amazing, and is super easy to make! What's not to like?!
I made the asparigus on the grill tonight! It was awesome. Thanks for posting the recipes. Hubby's on a no carb diet, so I'll have to try the pasta myself.
